Ethiopia, Yirgacheffe, Dumerso, Hirut, Red Honey

Hirut and her sister Mahder operate a washing (processing) station in Dumerso within the famed Yirgacheffe area. This lot comes from 232 smallholder farmers and was produced using the red honey method whereby some of the fruit is left attached to the seed (aka coffee bean). This produces a coffee of great flavor clarity with a roundness and fruit character that is in between washed process and the fruiter, fuller natural process.
