Honduras, Edwin Ever Sabillon, Parainema, Washed Proces

Edwin Ever Sabillon's family has a long history with coffee - during harvest season, he worked alongside his father picking coffee at their family farms. When he was given 1/2 hectare of land to manage, he planted it with Catuaí, but unfortunately, it was lost to leaf rust in 2011. Discovering the new varietal "Parainema" from his neighbor, Edwin was intrigued by its resistance to nematodes and reputation for producing a great cup of coffee. After winning the Cup of Excellence competition in Honduras, his neighbor's experience convinced him to plant 1/2 hectare of Parainema on his expanding farm "El Plan". Now with 2 hectares, Edwin and his wife Jenny continue to work with Beneficio San Vicente to improve their harvest and post-harvest practices on their 1400 meter farm in Las Flores village.

Brewing Method Recommendation: Espresso and filter brew are our favorites methods for this tropical coffee.

      • Ratio: 16 to 1 Water to Coffee for a full bodied cup. Use a little more water up to 17:1 ratio if you like the more delicate florals and lighter tropical notes to come through or take it down to 15:1 if you like syrupy coffee.
      • Brew Time: 4:00 is a good starting point
